Christmas is a crazy time of year at local butcher shops.
For Amy Tilley at Sherwood Road Organic Meats, their Christmas hams tend to fly out the door.
We stopped by to ask Amy about the difference between regular hams and certified-organic hams.
Amy says the key difference is organic hams are only preserved with salt, so they may appear greyer, unlike regular Christmas hams that can have a list of ingredients as long as your arm!
She says they can be treated and used exactly the same way and provides suggestions to suit all customers.
“We cater to a lot of sugar-free customers, so our glazes tend to be made with juice. Anything that will go sticky when it’s baked can be used, so things like juice or maple syrup.”
“For the customers who aren’t sugar free, they can use anything a high sugar content. Some people even use Coca Cola!”
Amy’s Glaze Recipe:
¼ teaspoon ground cloves
¼ teaspoon nutmeg
½ cup raw honey (warmed to liquid state)
2 tbsp dijon mustard
2 tbsp orange juice
Mix all ingredients and peel the skin back. Glaze the fat and cook for about 1.5 hours in the oven on 170 degrees. Baste often during cooking process.
It can be served warm or kept in the fridge until cold.
